Project summary:
The main objective of the project was the production of new kombucha beverages and detailed characterization of their chemical composition. In addition, a correlation was established between the composition of beverages and their functional properties. This has potentially expanded the range of beverages, while achieving the goal of obtaining products that do not have a harmful impact on the environment. Because the raw materials needed for the production process are economically available, and the technology itself does not require large investments, products available to a large number of people can be obtained, and they are medically desirable.
